Guacamole is one of the traditional Mexican dishes that can’t be miss. There are several types of guacamoles, with tomatillos, without tomatoes, chunky or smooth, in any of their variants it’s a delicious appetiser with totopos (corn chips). But it also can be used as an accompaniment of a dish.
1/2 cup finely chopped white onions or spring onions
2 jalapeño chiles finely chopped
3 tbsp. finely chopped fresh coriander
3 medium avocados (500gr)
1/2 cup tomatoes finely chopped
Put the onions, jalapeños, coriander and salt in a mortar or a food processor and mix into a paste. In a bowl mash the avocados and mix them with the paste. Add the tomatoes and mix gently. Serve immediately.
If you want you can add a few drops of lime.
