The dinner party will start with appetisers.
Sopa de lima
Seasoned chicken broth cooked with lemon, served with fried tortilla strips
Chile güero relleno
Banana chilli stuffed with fish cooked in tomato sauce
Panucho
Thick corn tortilla filled with refried black beans, topped with pulled chicken in adobo, red onion and habanero salsa
Ceviche de pescado
Snapper cooked in citrus with avocado and mango. Served with homemade corn chips
Cochinita pibil
Slow roasted pork marinated in a mix of annatto seeds and spices, cooked in banana leaves. Served with freshly made tortillas
